Cooking Directions:

For the Stuffing:

Wash and clean onion and garlic. Chop the onion in small pieces and mince the garlic.

In a large skillet heat 2 tablespoons of oil and stir them for 1-2 minutes.

Add the ground beef, one or two tablespoons of white wine and cook at high heat for about 7-10 minutes or until brown.

Adjust of salt, pepper and, if desired, add your favorite herbs such as chopped sage leaves and rosemary.

Transfer in a bowl and let cool. Add the cheese in small pieces and the bread crumbs.

Add the whole eggs and mix well with your hands. The stuffing is now ready to be used for filling the Cornish Hens.

Stuffing and baking the Cornish Game Hens:

Remove all the giblets. Burn on a flame all the extremities to remove all the small feathers. Also is very important to remove the part close to the anus, if present. Wash the chicken and drain with some paper towel.

Prepare a mix with salt, sage, rosemary, 3 tablespoons of white wine and 2 tablespoons of oil. Brush the chicken with the herb-mix both on the inside and on the outside.

Fill the Cornish Game Hen with the previously prepared ground beef stuffing.

Close the Cornish Game Hen with poultry nails or with needle and thread. This step is advisable to keep the stuffing inside but is not required. Tie the legs of each game hen together.

Take an oven tray large enough to contain the 2 Cornish hens. Grease it with 3 tablespoons of oil.

Place the stuffed fowls into the tray. If desired add some peeled potatoes in pieces to surround the chickens.

Pour 1 cup of vegetable broth, and a cup of white wine on top of the Cornish hens.

Bake in the preheated oven at 400F for about 60 minutes. Try to keep the Cornish game hens moisten while cooking. From time to time, moist them with the drippings from the bottom of the pan.

When ready, serve the Cornish Game Hens stuffed with ground beef with a side of potatoes and with some of the drippings.


Tips:

If desired you can add the giblets to the stuffing. Rinse and chop them in small pieces. Add to the oil before the ground beef and stir fry briefly. Giblets are usually inside the hen when you buy one, discard the neck if present.

You can use pieces of toast bread or crackers instead of bread crumbs.

For the stuffing you can substitute part of the ground beef with other kinds of cured meat such as bacon, pancetta or sausage meet.

If using frozen hens, thaw then completely before starting.
