  • Giardiniera Salad

  • Ham (sliced)

    1/2 lb
  • Frankfurters (beef, pork and turkey)

    1 pack
  • Mozzarella Cheese (cubed)

    1/2 lb
  • Yellowfin Tuna in Olive Oil

    1 can
  • Artichoke Hearts

    1 jar
  • Mushrooms

    1 jar
  • Capers

    3 tbsps
  • Olives

    4 tbsps
  • Extra Virgin Olive Oil

    3 tbsps
  • Hot Peppers (round, in oil or water)

  • Salt

    to taste
  • Black Pepper

    to taste

Steam the rice and let chill until cold

In a large bowl mix the rice with all the ingredients, chopped in pieces of about 1/2 inch

Adjust with salt and pepper to taste and serve


Rice salad is very versatile. You can add or substitute to the recipe many ingredients such as red peppers, cocktail onions, chicken leftovers, any vegetable of your choice according to your taste or what you have at home.

Save the oil in which is immersed the tuna. You can use it instead of the extra-virgin oil, for your rice salad!
