Ingredients:

  • Bacon (chopped)

    1 slice
  • Extra Virgin Olive Oil

    2 tbsps
  • Garlic (chopped finely)

    2 cloves
  • Onions (large)

    1/2
  • Carrots (diced)

    3
  • Turnips (diced)

    2
  • Tomatoes

    5
  • Basil Leaves (dried)

    2 tbsps
  • Salt

Cooking Directions:

Clean and wash all the vegetables. Chop onions and garlic finely. Cut bacon into small pieces.

Put carrots and turnip into a saucepan with hot water. Adjust with salt and bring to boil.

When carrots and turnips are boiled drain water. Alternatively you can steam them.

In the meantime, chop up the tomatoes. Set apart juice for later. You can use a potato masher to help you in this task.

Transfer garlic and onion into a frying pan at medium heat with the oil.

When the onion wilts add the bacon. Cook for few minutes until the bacon is browned.

Put heat to high and add the tomato pulp and skin. Saute for 5 minutes.

Take pan off the heat and sprinkle with the basil.

In a large bowl combine the boiled turnip and carrots, the tomato juices, and the saute of garlic, onions, tomatoes and bacon.

With an immersion blender reduce to a puree.

Enjoy this lovely soup as main dish or a starter.


Tips:

Adjust with some warm water or broth to the desired consistency.

You can customize this recipe with many of the vegetables you have in your home.

Cooking the turnip and the carrots until soft but not waterlogged is the secret for a successful result.
