Cooking Directions:
Wash, clean and cube the tomatoes. Wash and finely slice the onion.
Crack the eggs in a large bowl, season with salt and pepper and whisk them with a fork.
Heat on low flame a non stick frying pan and add the oil.
Stir fry the onions until lightly brown.
Add the cubed fresh tomatoes and saute briefly.
Quickly add the beaten eggs and stir with a wooden spatula to form soft curds.
Stirring constantly, cook until the eggs are ready but not completely set. Leave them moist, they will keep cooking for some time when removed from the pan.
Remove from the pan and serve with a side of bacon, ham, sausages or hash browns and your favorite toast for breakfast or dinner.
Tips:
For softer scrambled eggs, add some milk to the eggs and beat everything together before transfer them to the pan.
