Wash and clean the vegetables. Cut the cauliflower in pieces, chop the garlic and slice the mushrooms.
In a large non stick skillet, heat the extra virgin olive oil and saute the chopped garlic until lightly brown.
Add the cauliflower and stir fry for 5-6 minutes on medium-high stirring continuously.
At this point, add the sliced mushrooms and keep cooking until they wilt. Add small amounts of water if necessary. Adjust with salt and pepper.
If you prefer crunchier cauliflowers, remove from heat when the mushrooms are cooked. Otherwise, lower the heat, cover and let cook for 5-10 minutes stirring from time to time and ading some water if necessary.
Serve this healthy dish either as appetizer, main dish or as side for your main entree.
