Stir Fried Baby Spinach with Onions - Recipe

Wash and clean the fresh spinach. Wash and chop the onion.
In a large skillet (or wok) heat the extra virgin olive oil and stir fry the chopped onions until wilted.
When the onions are lightly caramelized, add the spinach and stir well.
Saute for 1-2 minutes before adding the vegetable broth.
Lower the heat to medium settings and let cook, stirring from time to time, for 15 minutes or until most of the juices have evaporated.
Adjust with salt and pepper before serving.
Instead of fresh spinach you can use frozen ones. Just add them frozen to the onion saute and stir fry for few minutes until ready.
