Peel and wash the jicama. Julienne cut it with a manual or electric food processor. Transfer the shredded jicama in a large salad bowl.
Wash the bell peppers and cut them in thin stripes. Wash and chop the cilantro.
Peel the orange and cut it in small pieces. Remove the seeds if present.
Mix the jicama with the bell peppers and the orange pieces. Add the chopped cilantro leaves.
Dress the salad with olive oil, salt and black pepper to taste and serve.
