Coffee and Cinnamon Cookies - Recipe

Coffee and Cinnamon Cookies are perfect biscuits for your daily breakfast. Cinnamon, coffee, hazelnuts and chocolate chips are combined in this recipe for a great and delicious sweet snack.

Ingredients:

  • All Purpose Flour

    1 and 1/2 cups
  • Sugar

    1 cup
  • Baking Soda

    1 tsp
  • Instant Yeast

    1 tsp
  • Cinnamon

    1 tsp
  • Cloves Powder

    1 tsp
  • Espresso Coffee

    1/3 cup
  • Whole Milk

    1 tbsp
  • Eggs

    1
  • Vanilla Extract

    1 tsp
  • Hazelnuts (Toasted and peeled)

    3 and 1/2 oz
  • Chocolate Chips

    3 and 1/2 oz
  • Salt

Cooking Directions:

Mix flour, sugar, baking soda, yeast, salt, cinnamon, cloves, the crushed hazelnuts and the chocolate chips in a large bowl.

In another small bowl mix the egg with coffee, milk and vanilla extract.

Add the content of the small bowl into the big bowl and mix all together helping with your hands to obtain an homogeneous dough. If necessary add some flour.

Divide the dough in two pieces of equal size and for each two long and thick logs (about 1 and 1/2 inches of diameter).

Lay on a baking pan and cook in the oven at 350 F for about 30-35 minutes.

Remove from the oven and let cool down for about 10 minutes.

Cut the logs in slices of about 1/3 inch andtoast slightly on each side.


Tips:

If you have a cookie cutter, you can roll the dough using a rolling pin in a 1/3 inch layer.

Another easy way to obtain well shaped cookies is to make small balls of dough (1/2 inch to 1 inch of diameter) and spread them down with your hands
