Ingredients:

  • Penne Pasta

    1 lb
  • Ricotta Cheese

    1/2 lb (see recipe ↪)
  • Pine Nuts

    1/3 cup
  • Sage

    to taste
  • Basil

    to taste
  • Rosemary

    to taste
  • Thyme

    to taste
  • Milk

    2 tbsps
  • White Pepper Corns

    to taste
  • Salt

Cooking Directions:

Bring to boil enough water to cook the pasta in a large pot. Add salt and, when boiling again, the penne. Cook until \"al dente\".

Meanwhile, using a food processor, blend together the pine nuts and the herbs: sage, basil, rosemary, white peppercorn and thyme with two tablespoons of milk. Adjust of salt.

In a large bowl mix well the ricotta cheese and the herbs.

Drain the pasta and add to the ricotta and herbs sauce in the bowl. Mix well and serve warm.


Tips:

If the sauce is too thick dilute with some extra milk. If it is too liquid saute the ricotta cheese with the pasta before adding the herbs mix. This will help to preserve their flavor.

Prepare the herb mix just before the use to avoid an undesired loss of flavor.
