Ingredients:

  • Tomatoes

  • White Bread

    6 slices
  • Parmigiano Cheese (grated)

    3 tbsps
  • Italian Parsley (or cilantro)

    1 bunch
  • Extra Virgin Olive Oil

    3 tbsp
  • Garlic

    1 clove
  • Black Pepper

    to taste
  • Salt

    to taste

Cooking Directions:

Wash, dry and cut lengthwise the tomatoes. With the help of a teaspoon remove the seeds. Let drain the tomatoes upside down for few minutes.

In a food processor blend the white bread slices, the parsley or the cilantro leaves and the garlic with the olive oil to obtain flavored bread crumbs. Adjust with salt and pepper.

Fill the tomatoes with the flavored bread crumbs and then press lightly with your fingers the filling.

Lay the tomatoes in a greased baking pan and top them with some grated Parmigiano Reggiano Cheese. Top with a small amount of extra virgin olive oil.

Bake in the preheated oven at 400F for about 15-20 minutes or until the parmigiano cheese turns golden on top.

Serve the tomatoes gratin hot as a side dish for a meat based meal. Tomatoes gratin can also be served as a tasty standalone dish or as warm appetizer.
