Cooking Directions:

Preparing the sauce for the filling:

If you're using fresh peas, open the pea pod and collect the peas in a large bowl. Wash and sort them, then boil for 2-3 minutes or until tender. If using canned peas, simply drain them without cooking. Frozen peas are ready to be uses as they are.

Wash and cut the onion in thin slices. Cut in pieces the ham and the mozzarella cheese.

In a large skillet, saute the onions in the extra virgin olive oil until lightly caramelized.

At this point, add the cooked ham and stir fry for one additional minute.

Add the peas and let cook for a couple of minutes to perfectly blend the flavors. Adjust with salt and pepper and let cool a bit before using for the filling.

Preparing the Casserole:

Wet the bread slices by dipping them quickly into the milk. Try not to soak them excessively, they should just be lightly moisten.

In a lightly greased baking pan, form a layer with the bread slices moistened in milk.

On top of the bread, add half of the peas, onions and ham sauce, previously prepared.

Add some mozzarella cheese in pieces.

Form a second layer with 4 moistened breads. Cover the bread with the remaining peas and ham sauce and top with the mozzarella cheese.

When the second layer is complete, make a third layer with the remaining 4 slices of milk-moisten bread.

Top the bread slices with abundant grated Parmigiano cheese and transfer in the oven at 400F. Bake for about 20-25 minutes. Broil for additional 5 minutes or until the top is brown if necessary.

Remove from the oven, transfer in single serving plates and serve hot for a delicious family brunch or for an original dinner.
