Shortcrust (Pasta Frolla) - Recipe

An easy recipe for a perfect homemade Shortcrust (or pasta frolla), the base for many pastries and cakes, in particular for the crostata.

  • All Purpose Flour

    1 lb
  • Sugar

    1 cup
  • Unsalted Butter

    2 sticks
  • Egg Yolks

  • Lemon Zest (grated)

  • Salt

    1/2 tsp

Cooking Directions:

Combine flour, sugar, the grated lemon zest and salt in a large bowl.

Add the egg yolks one by one and mix. Help with your hands, to obtain a more uniform and homogeneous dough.

Melt the butter and add it in the bowl. Mix very well until you obtain an homogeneous mix

Cool in the fridge for at least half an hour before using.


Shortcrust is a versatile base for many cakes, including the Italian crostata.
