Cooking Directions:

Preparing the Fresh Egg Pasta:

You can find detailed instructions on how to prepare the pasta at this link (How to make Homemade Pasta Dough) using half of the described quantities. If you prefer you can buy fresh egg pasta from a store or use regular pasta instead.

Briefly, mix 2 cups of sifted flour, 2 large eggs, 1 tablespoons of extra virgin olive oil, 1/3 teaspoon of salt.

Add small quantities of water and knead the pasta dough with your hands until you obtain a smooth and consistent dough.

When the desired texture is reached, wrap in transparent film and let rest for one hour. Roll out the dough with a rolling pin and shape the pasta according to your preferences. Use a pasta machine for faster and more consistent results.

Cooking the Pasta and preparing the Sauce:

In a large pot, bring to boil the water. When at rolling boil add the salt and the pasta and let cook for few minutes. Time may vary depending on the thickness and shape of your pasta. Consider a longer time for thick tagliatelle and a shorted time for homemade spaghetti.

If using regular pasta, follow the instructions as reported on the box.

In the meantime, in a large skillet melt the butter at low heat.

When the butter is melted, increase to medium-high flame and add the cubed pancetta. Instead of pancetta, cubed ham or bacon can be used.

Saute for few minutes, stirring continuously until the Italian pancetta is starting to brown.

Turn off the heat and add the saffron powder. Add a couple of tablespoons of milk or table cream if a creamier pasta sauce is desired.

When the pasta is ready, drain and transfer in the skillet with the pancetta and saffron sauce. Stir fry for 30-60 seconds while stirring.

Transfer into serving plates and serve while still hot. Garnish with some grated cheese if desired.


Tips:

Consider using a high quality, pure saffron powder. Saffron powder is available in many specialty stores, it is usually very expensive and sold in small envelopes. Many people confuse saffron powder with the much cheaper safflower flowers. Even if the name and color are similar, these two are flowers from different plants and have a different taste.
